his menu this way:
"Everything
is mediterranean in origin, but I've adapted it for the north
american palate.
Everything
on the menu is fresh. You won't find any cans in our kitchen.
All of our meats and produce are delivered fresh every day to
make sure we serve the highest quality food.
In
addition, our dishes are prepared when they are ordered. Many
restaurants will prepare their favourite dishes ahead of time.
We just do not do that, because it loses some of its flavour....it
takes more time, but we think it's worth it for our customers."
